Ingredients:
-
1 tablespoon olive oil
-
1 small yellow onion, finely chopped
-
1/2 lb (225 g) ground beef
-
1 teaspoon chili powder
-
1/2 teaspoon paprika
-
1/2 teaspoon cumin
-
1/4 teaspoon garlic powder
-
Salt and pepper, to taste
-
1/2 cup salsa (mild or hot)
-
1 1/2 cups shredded cheddar cheese
-
1/2 cup shredded mozzarella cheese
-
4 large flour tortillas
-
Cooking spray or a bit of butter for greasing the skillet
Directions:
-
Heat olive oil in a skillet over medium heat. Add chopped onion and sauté for 2–3 minutes until softened.
-
Add ground beef to the skillet. Cook for 6–7 minutes, breaking it apart, until fully browned and no longer pink.
-
Drain excess fat if needed, then add chili powder, paprika, cumin, garlic powder, salt, pepper, and salsa. Stir and let simmer for 2–3 minutes until thickened.
-
Remove skillet from heat. Let mixture cool slightly while you prepare the tortillas.
-
Place a tortilla on a flat surface. Sprinkle cheddar and mozzarella cheese evenly on one half of the tortilla. Top with the ground beef mixture, then fold the tortilla over to form a half-moon shape.
-
Heat a non-stick skillet over medium heat and lightly grease it with cooking spray or butter.
-
Cook quesadilla for 2–3 minutes on each side until golden brown and crispy. Cheese should be fully melted inside.
-
Remove from skillet and repeat with remaining tortillas and filling.
-
Slice into wedges and serve with sour cream, guacamole, or extra salsa.
