Ingredients

  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup unsalted butter, softened
  • 1/2 cup white sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup creamy peanut butter
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
  • 40 miniature chocolate-covered peanut butter cups, unwrapped

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix together flour, salt, and baking soda.
  3. In a large bowl, beat together butter, white sugar, brown sugar, and peanut butter until light and fluffy.
  4. Add the egg, vanilla extract, and milk to the butter mixture and beat well.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just blended.
  6. Shape dough into 1-inch balls and place each ball into the cups of a mini muffin tin.
  7. Bake in the preheated oven for 8–10 minutes or until the cookies are lightly browned.
  8. Remove from oven and immediately press a peanut butter cup into the center of each cookie. Cool in the pan for 10 minutes, then carefully remove and let cool completely on a wire rack.
