Ingredients
- 1 3/4 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 cup unsalted butter, softened
- 1/2 cup white sugar
- 1/2 cup brown sugar, packed
- 1/2 cup creamy peanut butter
- 1 egg
- 1 teaspoon vanilla extract
- 2 tablespoons milk
- 40 miniature chocolate-covered peanut butter cups, unwrapped
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix together flour, salt, and baking soda.
- In a large bowl, beat together butter, white sugar, brown sugar, and peanut butter until light and fluffy.
- Add the egg, vanilla extract, and milk to the butter mixture and beat well.
- Gradually add the dry ingredients to the wet ingredients, mixing until just blended.
- Shape dough into 1-inch balls and place each ball into the cups of a mini muffin tin.
- Bake in the preheated oven for 8–10 minutes or until the cookies are lightly browned.
- Remove from oven and immediately press a peanut butter cup into the center of each cookie. Cool in the pan for 10 minutes, then carefully remove and let cool completely on a wire rack.
