Ingredients

  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter
  • 1/4 cup brown sugar
  • 2 cups powdered sugar
  • 2 cups milk chocolate chips
  • 2 teaspoons coconut oil

Instructions

  1. Line a muffin tin with 12 cupcake liners.
  2. In a medium saucepan, melt the butter and brown sugar over low heat, stirring constantly until smooth. Remove from heat.
  3. Mix in the peanut butter until fully combined, then gradually add the powdered sugar, stirring until the mixture thickens.
  4. Scoop about 1-2 tablespoons of the peanut butter mixture into each cupcake liner, flattening it to form an even layer.
  5. In a microwave-safe bowl, melt the chocolate chips and coconut oil in 30-second intervals, stirring between each, until smooth.
  6. Pour about 1-2 tablespoons of melted chocolate over the peanut butter layer in each liner, smoothing the top with the back of a spoon.
  7. Refrigerate for at least 1 hour or until set.
  8. Serve chilled and enjoy!
